STORY

Mario Cortes, our chef, has been roasting pigs ever since he can remember. He's always the one called by friends and family whenever there is a party. Roasting a pig? Mario goes to the rescue. One day, while roasting a pig at a friend's house, a guest asked Mario for his business card. Mario didn't have one, but this person was a restauranteur that wanted to hire Mario to roast a pig for a party. Thus was born the idea for the business.

Inspired by his mom's love for cooking (and dancing), Mario learned from an early age how to marinade meat, blend spices to create a special mojo, and make a variety of Cuban cuisines that makes the mouth water ... all this, while dancing to salsa and smoking a cigar.

How Cubachón Emerged

Founded

2018

Mario wanted the name of the business to have some form of Cuba and pig. Pig in Spanish is Lechón. Thus the name Cubachón was born.

 

One of Mario's friends designed the logo and the website, another helped him get the business setup.

Cubachón launched on Sunday, September 16th with a fundraiser for Elizabeth's Promise Awards. We roasted 3 pigs and had food and music to entertain over 100 guests.

Will Travel

We at Cubachón want to make your event a success. Wherever you want us to be, we will be there. We will travel to your venue within a 3 hour drive.

 

We marinade the pig overnight and bring it ready to cook at your chosen location.

There is a $250 destination fee for events located over an hour from Elizabeth, NJ.
